Ingredients

2 pieces medium potatoes (diced)
1 piece small onion (chopped)
2 cloves garlic (minced)
2 cups fresh spinach (leaves)
4 cups chicken stock
2 Tablespoons Afia Corn Oil
1 Tablespoons lemon juice
0.5 cup cooking cream
1 Teaspoons Afia Natural Sea Salt
0.5 Teaspoons Afia Black Pepper

How to prepare

  • In a pot, heat Afia Corn Oil and sauté onion for 3–4 minutes until soft. Add garlic and cook 1 more minute.
  • Add potatoes and stock. Bring to a boil, then cover and simmer for 15–20 minutes until potatoes are tender.
  • Add fresh spinach and cook 2–3 minutes until wilted.
  • Use a hand blender and bllend the soup until smooth and creamy.
  • Stir in cream iand season with salt and pepper.
  • garnish with crutons, spinach oil, chili crushed and serve it warm.
