For assembly: 2 smoked turkey, slices 1 Fresh baked croissant 2 Edam cheese, slices 2 Teaspoons Homemade pesto 1 Tablespoons strawberry jam
How to prepare
For the pesto, in a food processor, combine the pine nuts, lemon juice, garlic, salt, and pepper and pulse until well chopped. Add the basil and pulse until combined.
while the food processor is running, drizzle in the olive oil and pulse until combined, add the Parmesan cheese and pulse to briefly combine. For a smoother pesto, add more olive oil.
To assemble, preheat oven at 180c, open croissant in half, spread the jam and the pesto sauce, add turkey slices and top with edam, put in the oven for 5 minutes or until cheese is melted and serve.
