Ingredients

½ cup Afia pine nuts
2 Tablespoons lemon juice
1 garlic clove
¼ Teaspoons salt
1/8 Teaspoons Pepper
2 cups basil leaves
¼ cup Afia Organic extra virgin olive oil plus more for a smoother pesto
¼ cup parmesan cheese, grated

For assembly:
2 smoked turkey, slices
1 Fresh baked croissant
2 Edam cheese, slices
2 Teaspoons Homemade pesto
1 Tablespoons strawberry jam

How to prepare

  • For the pesto, in a food processor, combine the pine nuts, lemon juice, garlic, salt, and pepper and pulse until well chopped. Add the basil and pulse until combined.
  • while the food processor is running, drizzle in the olive oil and pulse until combined, add the Parmesan cheese and pulse to briefly combine. For a smoother pesto, add more olive oil.
  • To assemble, preheat oven at 180c, open croissant in half, spread the jam and the pesto sauce, add turkey slices and top with edam, put in the oven for 5 minutes or until cheese is melted and serve.
