Ingredients

2 Tablespoons Afia pure Sunflower Oil
1 onion (chopped)
2 cloves garlic (minced)
2 pieces green chili
1 Tablespoons tomato paste
2 pieces Afia Black Lemon Dried
1 Tablespoons Afia Kabseh Spices
2 Teaspoons Afia Natural Sea Salt
1.5 cup tomato puree
1 whole chicken (halved)
1 cup boiled water
2 cups basmati rice (washed)

How to prepare

  • In a deep pot over medium heat, sauté the onion in Afia sunflower oil until it turns a dark brown color.
  • In the same pot, add the garlic, and once its aroma appears, add the tomato paste, tomato juice, kabsa spices, and salt. Mix well until combined.
  • Add the chicken pieces and stir them with the mixture until they absorb the flavors, then let it simmer for 5 minutes.
  • Add boiling water until it fully covers the chicken, then close the pressure cooker tightly. Once it whistles, count 10 minutes over high heat.
  • Turn off the heat and let the cooker rest a little, then lift the whistle to release all the remaining steam.
  • Add the rice, close the cooker again, and place it on high heat until it whistles once more. Reduce the heat and count an additional 10 minutes.
  • Open the cooker after the steam is released and serve the dish hot.
