Ingredients

Rice:
2 Cups cooked jasmine rice
2 Tablespoons Afia Sunflower Oil
2 Teaspoons Afia Curry Powder

Sauce:
1 clove garlic
1 Tablespoons fish sauce
1 Teaspoons Afia Sea Salt
0.25 cup Afia Sunflower Oil
1 Tablespoons lemon juice
2 cloves garlic minced
1 Teaspoons ginger grated
1 Teaspoons Afia Chilli Crushed
2 Tablespoons brown sugar

Assembly:
1 piece roasted chicken breast shredder
1 piece cucumber sliced
1 Tablespoons cilantro
1 Tablespoons Afia Peanuts roasted

How to prepare

  • Preheat the oven to 200°C.
  • In a large bowl, mix the cooked rice, sunflower oil, and curry powder.
  • Spread on a baking sheet and bake for 15-20 minutes, stirring halfway, until crispy.
  • In a food processor, blend the sauce ingredients until smooth. Transfer to a saucepan and simmer over medium heat for 5 minutes.
  • Combine crispy rice, shredded chicken, cucumber, and cilantro in a bowl. Drizzle with some of the warm sauce.
  • Top with roasted peanuts and serve immediately.
