Ingredients

750 g frozen Potato tater tots (defrosted)
1 Tablespoons Afia Corn Oil
1 Teaspoons Afia Paprika
3 Tablespoons mayonnaise
2 Tablespoons Greek yoghurt
1 Tablespoons soy sauce
1 Teaspoons rice vinegar
0.5 Teaspoons Afia Garlic Powder
1 Tablespoons gochujang
0.5 piece lemon, zest and juice
0.5 piece lemon juice
4 springs green onion (thinly sliced)
2 Tablespoons coriander (finely chopped)
0.5 cup Cucumber (thinly slices)
0.25 cup edamame

How to prepare

  • Preheat the oven to 200°C. Line a baking dish with parchment paper. Press the defrosted tater tots evenly into the dish to form a flat potato layer.
  • Drizzle with Afia Corn Oil  and sprinkle with Paprika.
  • Bake for 25–30 minutes, or until the potato layer is golden and crispy. Let it cool slightly.
  • In a bowl, whisk together mayonnaise, Greek yoghurt, soy sauce, rice vinegar, Afia Garlic Powder, gochujang, lemon zest, and lemon juice until smooth and creamy.
  • In a large mixing bowl, add the crispy potato chunks, green onion, coriander, cucumber slices, and edamame.
  • Pour the dressing over and toss gently to coat everything evenly. Transfer to a serving dish, garnish with extra herbs or green onion if you like, and serve.
