Preheat the oven to 200°C. Line a baking dish with parchment paper. Press the defrosted tater tots evenly into the dish to form a flat potato layer.
Drizzle with Afia Corn Oil and sprinkle with Paprika.
Bake for 25–30 minutes, or until the potato layer is golden and crispy. Let it cool slightly.
In a bowl, whisk together mayonnaise, Greek yoghurt, soy sauce, rice vinegar, Afia Garlic Powder, gochujang, lemon zest, and lemon juice until smooth and creamy.
In a large mixing bowl, add the crispy potato chunks, green onion, coriander, cucumber slices, and edamame.
Pour the dressing over and toss gently to coat everything evenly. Transfer to a serving dish, garnish with extra herbs or green onion if you like, and serve.
