Ingredients

500 g shrimp (skinless and dried)
2 Tablespoons Afia Extra Virgin Olive Oil
5 cloves garlic (minced)
0.75 cup sun-dried tomatoes (roughly chopped)
2 Teaspoons Afia Oregano
1 Teaspoons Afia Chili Crushed
0.5 Teaspoons Afia Natural Sea Salt
1 Teaspoons Afia Black Pepper Powder
1 cup orzo
2.75 cups chicken broth
0.75 cup heavy cream
1 cup baby spinach
0.75 cup parmesan cheese (grated)

How to prepare

  •  in a large deep skillet Heat Afia Extra Virgin Olive Oil over medium-high heat, Add the shrimp and cook for 1 minute on each side, until browned.
  • remove shrimp from heat and sit aside. Add sun-dried tomatoes, garlic, and seasoning. Cook for another 2 minutes.
  • Stir in the orzo and broth. Reduce heat to medium,
  • Cover and cook for 12 minutes, stirring every few minutes to prevent sticking.”
  • Once orzo is cooked through, stir in the shrimp, cream and spinach. Cook for 1 minute until spinach wilts.
  • Add parmesan and mix until melted and creamy then serve.
