Ingredients

Chicken marinade:
2 lemongrass stalks, trimmed, tough outer layers removed
1 red chili
3 garlic cloves
1 piece ginger, peeled
1 Teaspoons fish sauce
1 Tablespoons soy sauce
1 Tablespoons Afia corn oil

For chicken:
500 g skinless, boneless chicken breast
Salt to taste
Afia corn oil

For sauce:
Remaining chicken marinade
2 Tablespoons water
1 Teaspoons cornstarch + 1 tbsp water
1 Tablespoons honey

Garnish:
Cilantro leaves
Sesame seeds and lime wedges

How to prepare

  • To make chicken marinade, In a food processor, mix lemon grass, garlic, chili, ginger until well minced.
  • Add fish sauce, soy sauce and mix until paste forms.
  • For the chicken, Season chicken breast with salt and add to a bowl with the marinade turning to coat, let marinate at least 10 minutes to 2 hours.
  • On a hot stove grill, add corn oil and grill chicken breast on medium heat one both sides 8 minutes on each side, when cooked sit aside.
  • For the sauce, to a pan add the marinade with water and cornstarch slurry along with honey and let it cook on medium low until thickened.
  • Add the chicken to the sauce and let it infuse and simmer for 5 minutes.
  • Transfer to a serving plate and Garnish with sesame seeds and serve.
