In a small bowl combine all seasoning spices and oil. Rub the chicken with seasoning, on a hot skillet sear chicken on both sides until golden and crispy and set aside.
For gravy in the same pan whisk flour with about 1/2 cup of broth until lump free, then whisk in remaining stock and pepper, arrange chicken back in the skillet.
Cover and cook on low heat for 40 minutes, or until chicken is fully cooked.
Remove chicken onto a plate, then give the gravy a good whisk to make it smooth.
Serve it over mashed potato, pour gravy and top and serve.
