Ingredients

2kg leg of lamb
2 Tablespoons Dijon mustard
½ cup Afia Pure Corn Oil
1 Teaspoons Afia Black pepper
1 Teaspoons Afia Pink Himalayan Salt
1 Tablespoons Afia Paprika
8 garlic cloves, cut in half.

How to prepare

  • In a small bowl, mix the Black pepper, salt, paprika, Dijon mustard and corn oil until well combined.
  • Make several small cuts all over the leg of lamb and add a slice of garlic inside each cut.
  • Pour in the marinade on the leg of lamb and spread evenly from all sides, back and front.
  • Transfer to a baking pan, and broil for 30 minutes.
  • Remove from oven and cover with aluminum foil tightly.
  • Reduce the oven heat to 170 and cook for 3 hours.
  • After 3 hours check the lamb tenderness, it should be fall of the bone tender.
  • Let it rest for 10 minutes then serve with sauteed mushrooms and roasted potatoes.
