Heirloom tomato marination: 1 large Heirloom tomato, sliced 2 Tablespoons Afia extra virgin olive oil
Pinch of salt ½ Teaspoons Italian herbs ¼ Teaspoons black pepper 1 garlic clove, minced 3 Tablespoons Balsamic vinegar
In a bowl whisk balsamic vinegar, olive oil, garlic, salt, black pepper, and Italian herbs until well combined.
Add the sliced tomato to the marination and leave for 5 minutes while preparing the rest of the sandwich.
On a hot pan on medium heat, spray bread slices with olive oil spray, and toast on both sides until golden and crispy.
On the sourdough bread, add pesto on both slices, add the sliced cheese, heirloom tomato slices and top with arugula and chopped pistachio, cover with the second layer and serve.
