Ingredients

2 pieces medium sweet potato
2 Tablespoons Afia Sunflower Oi
1 Teaspoons Afia Natural Sea Salt
0.5 Teaspoons Afia Black Pepper
1 Tablespoons Afia Butter
0.25 cup cheddar cheese (grated)

toppings:
2 Tablespoons corn
2 Tablespoons cucumber pickles (chopped)
2 Tablespoons boiled beetroot (chopped)
1 Tablespoons parsley (chopped)
2 Teaspoons ranch

How to prepare

  • Preheat oven to 200°C.  rub the potato with with Afia Sunflower Oil, pok with a fork then season.
  • wrap with parchment paper, foil and Place them on a baking sheet and roast for 40–50 minutes, or until soft and caramelized.
  • Slice each piece open lengthwise and gently fluff the inside with a fork.
  • Add a small knob of Afia Butter inside each and let it melt, then top with cheese and mix.
  • Add toppings, drizzle with ranch, garnish with parsley and serve.
