1 Cup Grilled Corn
500 Gram Gem Lettuce
1 Cup Black Beans
1 Cup Cooked Quinoa
2 Cup Tomatoes, Cubes
1 Cup Orange Bell Pepper, Cubes
1 Cup Avocado, Cubes
1 Cup Pickled Onions, Sliced
1 Cup Fresh Cilantro. Roughly Chopped
2 Tablespoons Pecans, Chopped
1 Cup Corn Tortilla, Roasted
1 Cup Sour Cream
1 Teaspoons Maple Syrup
1 Tablespoons Chipotle In Adobo, Chopped
1 Tablespoons Fresh Lime Juice
1 Cup Sea Salt Flakes
1 Tablespoons Cumin Powder
1 Tablespoons Cilantro, Chopped
2 Tablespoons Afia Olive Oil

How to prepare

  • Start by making the sauce, Whisk together the sour cream, cilantro, maple syrup, chipotle in adobo, lime juice, cumin and salt.
  • In a large salad bowl, combine the lettuce, black beans, corn, quinoa, tomatoes, bell pepper, avocado, pickled onions, cilantro, and pecans.
  • When ready to serve, drizzle with the Chipotle Dressing, and adjust salt to taste, garnish with crushed tortilla and serve.
