Ingredients

3 Tablespoons Afia Pure Corn Oil
1 Red Onion, Chopped
3 Teaspoons Garlic, Minced
1 Cup Carrot, Chopped
300 Gram Sweet Potato, Chopped
250 Gram Red Lentils, Cleaned And Washed
750 Mili Litre Chicken Broth
500 Mili Litre Water
1 Teaspoons Black Pepper
1 Teaspoons Turmeric
1 Teaspoons Afia Cumin Powder
1 Teaspoons Salt
1 Teaspoons Afia Chili Crushed
3 Tablespoons Lemon Juice
1 Cup Cooking Cream Fried Pita Bread Squares Parsley Chopped Lemon Wedges

How to prepare

  • In a pot over medium heat, add oil, onions and cook until tender, add garlic, and sweet potato. cook for 6 to 7 minutes until browned. Add lentils and sauté for 2 to 3 minutes more.
  • Add the chicken broth and water. Bring to a boil, then lower the heat, cover, and simmer for 45 to 50 minutes until everything is softened. Use a hand blender to blend until smooth.
  • Add lemon juice and cooking cream then season with chili flakes, black pepper, turmeric, cumin, and salt.
  • Serve with lemon wedge, parsley and fried bread
