How to prepare
In a skillet, heat the corn oil over medium-high heat.
Cook the chicken with half the amount of spices until it browns and is cooked, then remove it from the skillet and set it aside.
In the same skillet, add a little oil, then add the onion, bell pepper, and spices, then cook until the chicken is half-cooked and slightly browned.
Add the corn, beans, and chicken and cook for 5 additional minutes until the ingredients are well combined.
Season with lemon juice and chopped cilantro and serve.
Refrigerate for up to a week and serve with rice, or as a filling for tacos or burritos, or even to prepare sandwiches.
