Ingredients

450 g Chicken breast small cubes
1 piece White onion chopped
1 piece Green bell pepper large cubes
1 piece Red bell pepper large cubes
1 piece Yellow bell pepper large cubes
1 Cup Corn canned
1 piece Jalapeno chopped
1 Cup Black beans canned
1 Teaspoons Afia Cumin Powder
1 Teaspoons Afia Salt
0.5 Teaspoons Afia Black pepper Powder
1 Teaspoons Afia Coriander powder
0.5 Teaspoons Afia Paprika
2 Tablespoons Afia Corn Oil Plus
0.5 bunch Coriander chopped

How to prepare

  • In a skillet, heat the corn oil over medium-high heat.
  • Cook the chicken with half the amount of spices until it browns and is cooked, then remove it from the skillet and set it aside.
  • In the same skillet, add a little oil, then add the onion, bell pepper, and spices, then cook until the chicken is half-cooked and slightly browned.
  • Add the corn, beans, and chicken and cook for 5 additional minutes until the ingredients are well combined.
  • Season with lemon juice and chopped cilantro and serve.
  • Refrigerate for up to a week and serve with rice, or as a filling for tacos or burritos, or even to prepare sandwiches.
