Ingredients

Heirloom tomato marination:
1 large Heirloom tomato, sliced
2 Tablespoons Afia extra virgin olive oil
Pinch of salt
½ Teaspoons Italian herbs
¼ Teaspoons black pepper
1 garlic clove, minced
3 Tablespoons Balsamic vinegar

Sandwich assembly:
2 Teaspoons pesto
Heirloom tomato
200g Fresh mozzarella, slices
½ cup arugula
1 Teaspoons Afia pistachio, chopped
2 Sourdough slices

How to prepare

  • In a bowl whisk balsamic vinegar, olive oil, garlic, salt, black pepper, and Italian herbs until well combined.
  • Add the sliced tomato to the marination and leave for 5 minutes while preparing the rest of the sandwich.
  • On a hot pan on medium heat, spray bread slices with olive oil spray, and toast on both sides until golden and crispy.
  • On the sourdough bread, add pesto on both slices, add the sliced cheese, heirloom tomato slices and top with arugula and chopped pistachio, cover with the second layer and serve.
