In a bowl mix the dry ingredients. Then, add the yogurt and knead with your hands until a silky dough forms. Put it in a bowl and drizzle with oil and let it Sit aside to rest for 30 minutes. Make the filling by combining everything in a bowl.
To start filling, cut the dough to 4 parts and shape into a ball. Roll it out till its thin to get a circle shape, fill with cheese and close from all sides to form a circular flat dough.
On a wide nonstick pan, brush oil and start cooking the dough on medium low heat until golden brown on both sides and cooked through.
When cooked, brush with olive oil and sprinkle with the zaatar mixture before serving.
