Ingredients

4 Medium Gold Potatoes. Peeled And Cut Into Medium Cubes
500 Mili Litre Afia Pure Corn Oil For Frying
2 Tablespoons Afia Extra Virgin Olive Oil
1 Teaspoons Salt
4 Garlic Cloves, Minced
2 Teaspoons Afia Paprika
1 Cup Cilantro, Chopped And Divided
2 Tablespoons Red And Green Chili, Sliced

How to prepare

  • In a frying pan heat corn oil and fry potatoes until golden and crispy.
  • Transfer to a paper towel and sit aside, meanwhile in a skillet heat olive oil on medium low heat, cook garlic and chili for 30 seconds then add half of the cilantro and cook until wilted.
  • Add the potato, salt and paprika, stir until all ingredients are combined, add the rest of the cilantro and serve.
