Ingredients

250 g pitted dates (chopped)
1 Teaspoons baking soda
1.5 cups boiling water
125 g Afia Butter (softened)
1 cup brown sugar
1 Teaspoons vanilla extract
2 pieces eggs
1.75 cups flour
2.5 Teaspoons baking powder
0.25 Teaspoons Afia Natural Sea Salt

caramel sauce
1 cup brown sugar
300 ml whipping cream
0.5 Teaspoons vanilla extract
60 g Afia Butter

How to prepare

  • Preheat oven to 180°C and grease baking dish with butter.
  • Combine dates and baking soda in a bowl, pour over boiling water, and let sit for 20 minutes.
  • in a bowl beat Afia Butter, brown sugar, and vanilla until creamy. Add eggs one at a time.
  • Fold in the date mixture and flour until smooth.
  • Spoon into ramekins, place on a baking tray, and bake for 50-60 minutes or until a skewer is inserted and comes out clean.
  • For the sauce, in a sauce pan over medium low heat, simmer Afia Butter, brown sugar, and cream until slightly thickened.
  • Pierce warm cake with toothpick many pokes, pour over some sauce, let stand a few minutes, and serve with extra sauce or vanilla ice cream.
