Ingredients

500 g chicken breast (thick slices)
1 piece green bell peppers (slices)
1 piece red bell pepper (slices)
1 piece yellow bell pepper (slices)
1 piece red onion (thinly sliced)
3 Tablespoons Afia Corn Oil

Seasoning:
2 Teaspoons chili powder
1 Teaspoons Afia Cumin Powder
1 Teaspoons Afia Paprika
0.5 Teaspoons Afia Coriander Powder
0.5 Teaspoons Afia Garlic Powder
0.5 Teaspoons Afia Natural Sea Salt
0.5 Teaspoons Afia Black Pepper Powder

For serving:
2 Cups cooked white rice
2 Tablespoons sour cream
1 Tablespoons cilantro (roughly chopped)
1 Tablespoons avocado

How to prepare

  • Preheat oven to 220 c and line a baking sheet.
  • add chicken, peppers, onions, garlic, and Afia Corn Oil to the sheet.
  • Mix seasoning in a bowl and sprinkle over the mixture. Toss to coat evenly.
  • Spread in an even layer and bake for 20 minutes, tossing halfway.
  • take it out when chicken fully cooked and the veggies are charred.
  • Serve with white rice, cilantro, sour cream and avocado.
