Ingredients

700 g ground beef
0.5 piece onion chopped
2 Tablespoons taco seasoning
0.5 Teaspoons Afia Coriantder Powder
1 piece Jalapeño pepper seeded and minced
1 can red beans
2 Tablespoons flour
1 can tomato diced
0.5 Cup beef stock
2 Tablespoons Afia Corn Oil Plus

for serving:
1 Tablespoons avocado
1 Tablespoons Salsa
2 cups Cheddar cheese grated
10 pieces tortillas

How to prepare

  • In a wide pan over medium high heat, cook the beef and onion with Afia Sunflower Oil until browned.
  • Add the taco seasoning, jalapeño, beans, coriander, and flour. Cook for 1–2 minutes until well combined.
  • Stir in the diced tomatoes and beef stock. Lower the heat and let simmer for 15 minutes.
  • To assemble, place cheese on half of each tortilla, add a spoonful of the beef mixture, top with more cheese, then fold in half.
  • Arrange the tacos on a tray lined with parchment paper, making sure they don’t touch. Freeze until solid if storing.
  • To serve immediately, heat Afia sunflower oil in a skillet. Fry the tacos 2–3 minutes per side until crispy and golden.
  • serve warm with avocado and salsa.
