Ingredients

2 pieces smoked salmon fillets
4 Cups mixed greens
0.5 piece cucumber thinly sliced
0.25 piece red onion thinly sliced
1 piece ripe avocado sliced
2 Tablespoons dill roughly chopped
2 pieces soft-boiled eggs
1 Teaspoons Afia Sea Salt

For the Croutons:
2 pieces sourdough bread slices cubes
1 Tablespoons Afia Organic Extra Virgin Olive Oil
0.5 Teaspoons Afia Garlic Powder
0.5 Teaspoons dried thyme
0.5 Teaspoons Afia Sea Salt

For the Vinaigrette:
2 Tablespoons capers chopped
1 Tablespoons Dijon mustard
2 Tablespoons apple cider vinegar
3 Tablespoons Afia Organic Extra Virgin Olive Oil
1 Teaspoons honey
1 clove garlic minced
0.5 Teaspoons Afia Sea Salt
0.25 Teaspoons Afia Black Pepper powder

How to prepare

  • Preheat oven to 190°C.
  • In a bowl toss sourdough cubes with olive oil, garlic powder, thyme, salt, and pepper. Bake for 10-12 minutes until crispy. Set aside.
  • For the sauce in a bowl Whisk together capers, Dijon mustard, vinegar, olive oil, honey, garlic, salt, and pepper.
  • To assemble, in a large bowl Toss mixed greens, dill, cucumber, onion, and avocado with vinaigrette.
  • Top with smoked salmon, halved eggs, croutons and serve.
